I got asked to speak at my MOPS group this morning as part of a panel on healthy eating. Random, I know as I stuff my face full of Baby Swiss Cheez-Its right now. But anyways I shared a recipe called a Breakfast Cookie that I make with Chia Seeds in it...yes cha-cha-cha CHIA!
It's not really a cookie it's more like mashed up oatmeal on a plate. It's filling and I love how much energy the chia seeds in it give me. Did you know that Chia seeds are one of the highest known plant sources of essential fatty acids and are more rich in omega-3 fatty acids than flax seeds?
Today in front of about 50 people, myself and 8 other Moms presented some great recipes and the best part was that we got to sample them all as we were demonstrating them.
Who know Quinoa Tacos would be so delicious? Or that you couldn't taste pureed cauliflower in a peanut butter dip?
Breakfast Cookie recipe:
1/3 c oats
1 tablesp. peanut or almond butter
1/2 scoop whey protein powder (I use Trader Joes Vanilla)
1 tablespoon of chia seeds
1/8 c of milk
stir together
now add whatever you would like to it: raisins, pumpkin, choc chips, banana, brown sugar, cinnamon, anything!
Flatten onto a small serving plate and refrigerate overnight. Makes one big cookie that you can eat with a spoon!
