Chocolate Zucchini Bread

Zucchini must me in season right now because my Trader Joe's pack came with about 6 of them! I can't eat that much Zucchini so I figured I would find a bread recipe for it all.

I found the original recipe here: Babble Food but I modified it to make my own version.


Chocolate Chocolate Zucchini Bread (ok Chocolate CAKE as I told my kids)!
  • 2 1/2 c white whole wheat flour
  • 1/2 c baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 c regular sugar
  • 1/2 c Stevia
  • 3 eggs (I used Egg beaters instead of real eggs)
  • 1 c canola oil
  • 2 teaspoons vanilla
  • 2 1/2  cups of firmly packed grated Zucchini (I used the finest grater as my kids are like little detectives should they spot something green)
  • 1 cup chocolate chips
  • 3 tablespoons of Chia seed
Stir flour, cocoa, soda, powder and salt together.
Beat eggs, oil and vanilla.
Combine the ingredients.
Stir in Chocolate chips and Chia seeds

Pour into two 9x5 greased loaf pans

Bake at 350 for 55 mins or until a cake tester comes clean

The little detectives did spot a green piece but they still devoured the "cake." It tasted so much like chocolate  birthday cake that my 2 year old felt obligated to sing Happy Birthday prior to eating it!

The recipe did make more than this but by the time I got around to getting the camera it was almost gone!
